Ingredients (for the Bagels):

  • 4 cups bread flour (the stuff dreams are made of)
  • 2 teaspoons instant yeast (because waiting for dough is for amateurs)
  • 2 tablespoons cocoa powder (chocolatey bagels – need we say more?)
  • 1 1/2 tablespoons molasses (for that touch of sweetness)
  • 1 tablespoon caraway seeds (optional, but we're feeling fancy)
  • 1 1/2 teaspoons salt (because bland bagels are so last season)
  • 1 1/4 cups warm water (bathing suit not required)
  • 1 tablespoon vegetable oil (for that bagel glow-up)
  • Cornmeal (because bagels like a sprinkle party)

For the Scallion Cream Cheese:

  • 8 oz cream cheese, softened (let it party at room temperature)
  • 1/4 cup chopped scallions (the life of the cream cheese party)
  • Salt and pepper to taste (seasoning – the unsung hero)

How to prepare (without taking life too seriously):

  1.  In a large bowl, toss together the bread flour, instant yeast, cocoa powder, molasses, caraway seeds (if you're feeling extra), and salt. Mix it like you're making a doughy disco.
  2. Slowly pour in the warm water and mix until you've got a dough that's as smooth as a bagel-loving cat's purr.
  3. Knead that dough like you're giving it a spa day – 10 minutes of TLC should do the trick.
  4. Let the dough rise. Go catch up on your favorite sitcom. You've earned it.
  5. Shape your dough into balls – because we're making bagels, not boring rolls.
  6. Boil those bagels like you're giving them a hot tub party. Just a quick dip, they're not on vacation!
  7. Brush those boiled bagels with oil – it's their time to shine in the oven.
