We asked Robin at Cansaf what his favourite food was from Zimbabwe and the Rump Steak with fried Eggplant and sweet potato wedges was the winner.

Time to whet your appetite with a Zimbabwean version of a classic steak dinner – introducing Zimbabwe Rump Steak with Fried Aubergine and Sweet Potato Wedges! Prepare yourself for lots of laughs, chopping and sizzling on your way through this delicious meal!

Cooking in silence is no fun so let’s  set the mood to cook this fantastic meal.

Dreaming of Zimbabwe  

Ingredients:

  •  4 rump steaks (because one is never enough, am I right?)
  • 2 large eggplants (for that crispy, creamy goodness)
  • 4 medium sweet potatoes (the unsung heroes of the veggie world)
  • Olive oil (for a little extra love)
  • Salt and pepper (the dynamic duo of seasoning)

How to Prepare (with a side of laughter):

  1. Preheat oven 425°F (220°C). It's about to get hot in here folks!
  2. Take those sweet potatoes and slice them into wedges. Think mini sweet potato smiles – because who doesn't love a happy spud?
  3. Toss the sweet potato wedges in a good drizzle of olive oil, salt and pepper them up then spread them out on a baking sheet. Pop them in the oven until they're golden and crispy. It's like giving your taste buds a hug with a sweet potato!
  4. Whilst those sweet potatoes are doing their thing it's eggplant time. Slice them into rounds – not too thick, not too thin, just right. Think Goldilocks but with eggplants!
  5. Heat up a skillet with some olive oil and fry off those eggplant rounds until they're golden brown and delicious. Eggplant goes from humble veggie to crispy perfection!
  6. Once your sweet potato wedges are golden and your eggplant rounds are crispy, it's steak o'clock! Season those rump steaks with a good amount of salt and pepper then grill them to your desired doneness. Rare, medium or well-done – this steak is here to please!
  7. Plate up your masterpiece – a juicy Zimbabwean Rump Steak alongside crispy Fried Eggplant and golden Sweet Potato Wedges. It's like an explosion of flavours that will have your taste buds doing the happy dance!
  8. Take a bite, let the flavours linger and share a laugh with your fellow foodies. Because good food is meant to be enjoyed with great company and lots of laughter!

Tip: an ice cold Zambezi lager is the perfect drink to go along side this meal together with a a bottle of Mebndoza malbec according to Robin from Canasf.
