We asked Clémence at So French DMC about his favourite dish from France and it turned out to be this delicious French Onion Soup (Soupe à l'Oignon) .

Ingredients for the french onion soup:
- 4 large onions (because we're about to cry some happy tears)
- 4 tablespoons butter (because everything's better with butter, right?)
- 2 tablespoons all-purpose flour (to thicken things up, like a good plot twist)
- 1 cup white wine (a splash for the soup, a splash for the chef)
- 6 cups beef broth (the unsung hero of hearty soups)
- Salt and pepper (the dynamic duo of seasoning, coming to save the day)
- Baguette slices (for some carb-y goodness)
- Gruyère cheese (the star of the cheesy show)
Thinly slice those onions – they’re the best for this recipe. Caution: it might bring both tears of laughter and onions!
Melt butter in a pot and throw in the onions. Just let them mingle with each other like close friends around camping bonfire, stirring occasionally as even onions need some care.
Sprinkle flour then mix well. Imagine as if you are simply rolling your onions into a ball of flour- it’s just all about getting that thick comforting feeling.
Add a splash of white wine! Pour that over the cooking onion and simmer until reduced. It’s almost like that moment when your favorite recipe requires you to take some time out to enjoy some quality red; onions have vacations too!
Add beef broth, salt, and pepper. Stir it up then give space for flavors to intermingle. It is like a mixer for soups without awkward exchanges.
While doing that thing with soup, toast baguette slices. These crunchy little breads will be perfect accompaniments on your cheesy journey!
Ladle soup into oven-safe bowls, place baguette slice atop each one and generously sprinkle Gruyère cheese over it all . This is just like making mini artworks from edibles!
Keep an eye on them while they are under broiler until the cheese melts well but not burn. It should be melting rather than burning down completely.
Once the cheese is gooey and golden brown remove from the broiler unit cool before cutting or serving. A singed tongue is part of cooking culture only we can prevent it this time round.
With a flourish, serve your Soupe à l'Oignon – maybe add a sprinkle of parsley for that fancy touch.
